Here is one of the many gems I collected during my kitchen time with Oka:
Tofu That’s Tolerable
in the style of Puri Duwur Abing
by Cok Oka
1 block Tofu
¼ – ¾ c Soy sauce
Bullion cube (optional)
¼ – 2/3 c red onion or shallot
black pepper to taste
frying oil (choose an oil meant for high-heat, like peanut or coconut)
- Mix together soy sauce, water, onion, pepper and bullion (if you please).
- Cut tofu into slices 1/2” thick or slightly thinner.
- Soak in marinade 1 hr.
- Heat enough oil to float a piece of tofu in wok or pot
- When oil is hot, fry the tofu for two minutes.
Serve with any dip you like
