Bali Cooking Lesson 4: Tofu That’s Tolerable


Here is one of the many gems I collected during my kitchen time with Oka:

Tofu That’s Tolerable
in the style of Puri Duwur Abing
by Cok Oka

Ingredients:

Tolerable Tofu in the foreground, accented by my friend Jeanne!

1 block Tofu
¼ – ¾ c Soy sauce
1-3c. Water
Bullion cube (optional)
¼ — 2/3 c red onion or shallot
black pepper to taste
frying oil (choose an oil meant for high-heat, like peanut or coconut)

  • Mix together soy sauce, water, onion, pepper and bullion (if you please).
  • Cut tofu into slices 1/2” thick or slightly thinner.
  • Soak in marinade 1 hr.
  • Heat enough oil to float a piece of tofu in wok or pot
  • When oil is hot, fry the tofu for two minutes.
  • Serve with any dip you like
